Recipe

Ingredients

  • 2 tomatoes, chopped into bite-sized pieces

  • 1 green bell pepper, sliced

  • 1 cucumber, sliced

  • ⅛ cup red onion, thinly sliced

  • cup Kalamata or green olives

  • 5 ounces feta cheese, preferably a slab or crumbled

  • cup (or more) PJ Kabos Family Reserve Organic Robust or Medium Extra Virgin Olive Oil

  • Oregano, to taste

  • Salt, to taste


Preparation

  • In a deep bowl, add tomatoes, bell pepper, cucumber, red onion and olives.

  • Drizzle generously with EVOO of choice, add the oregano and salt, then gently toss to coat.

  • Place the feta on top and finish with a little more oregano and a final drizzle of EVOO.


Serve

  • Greek village bread for soaking up the delicious juices
