In parts of the United States, summer temperatures can exceed 100°F (38°C), and delivery vehicles, warehouses, mailboxes and front porches may become significantly hotter.
While extra virgin olive oil is remarkably resilient, prolonged exposure to excessive heat can gradually affect its freshness, flavor and some of its naturally occurring beneficial phenolic compounds.
