Recipe: Watermelon & Feta Cheese with High Phenolic Organic Olive Oil
1 medium watermelon, seedless
mint leaves, fresh, finely chopped, to taste
½ sweet red onion, finely chopped
½ lime, juice and zest
¼ cup PJ KABOS High-Phenolic Organic Extra Virgin Olive Oil—medium (white bottle)
salt, to taste
pepper, to taste
balsamic vinegar sauce for dressing, optional
Slice open the watermelon, cut off the rind and cut the red seedless flesh of the melon into cubes. Add to a large salad bowl.
Add the onion, lime zest and juice, and fresh mint to the watermelon.
Cube the feta cheese and add to the salad.

Grate pepper to taste.
