Nobuyuki Matsuhisa, known to the world simply as "Nobu," is the highly acclaimed and influential chef/proprietor of Nobu and Matsuhisa restaurants located around the globe on five continents. ​It was at the Matsuhisa Mykonos restaurant, that PJ KABOS' founder, James Panagiotopoulos, first crossed paths with Chef Nobu.

During the past 10 years, James has had the privilege to work in 3 of Nobu's restaurants:

>Nobu St.Moritz (Badrutt's Palace, Switzerland) in 2006,

>Matsuhisa Mykonos (Belvedere Hotel) in 2008 and

>Matsuhisa Athens (Astir Palace Vouliagmeni) 2008 to 2016.

Since meeting Nobu, James has admired and been deeply motivated by his story and his path to success.

Born and raised in Saitama, Japan, Nobu served a rigorous apprenticeship at a respected sushi bar in Tokyo.  It was not long before his dreams of seeing the world moved him to open a sushi bar in Peru.  A classically trained sushi-chef, Nobu was challenged by the new culture and regional ingredients, which kindled his inventive style, known today as Nobu Style.  After three years in Peru, Nobu moved to Argentina, then home to Japan, then on to Alaska, before finally settling in Los Angeles.

Nobu opened his first restaurant in the United States, Matsuhisa in Beverly Hills, California, in January 1987.  Matsuhisa was an instant success and became a magnet for food lovers and celebrities alike. It was here that his longtime friendship and business relationship with actor and director Robert De Niro began. It was at De Niro’s urging that together they opened the very first Nobu in New York City in 1994 with restaurateur Drew Nieporent. Like Matsuhisa, Nobu was an instant hit and, as they say, the rest is history: Over 40 restaurants and 2 hotels across the globe and still growing! With such a magnificent collection of restaurants, it is no wonder that Nobu’s restaurants have been so widely honored.

As for James and PJ KABOS, while working at Matsuhisa Athens, James asked Nobu to taste his creation, at the time, the newly founded label PJ KABOS Extra Virgin Olive Oil. Nobu was so impressed with the quality of the oil that he accepted James's request to start using it in his restaurants. Within a year, PJ KABOS Extra Virgin Olive Oil is now being

used in all Nobu Matsuhisa restaurants in the USA, most in Europe and will soon be used 

in all the other Nobu Matsuhisa locations worldwide.
